Method: 

1. Preheat the oven to 170°C fan. Grease and line a 2lb loaf tin.
2. Cream the butter and sugar together until pale and fluffy. Don’t rush this step, it gives you that beautiful soft crumb.
3. Add the eggs, one at a time, mixing well after each addition.
4. Stir in the lemon zest, lemon juice and Greek yoghurt.
5. Sift together the self-raising flour and baking powder, then gently fold into the mixture until just combined. Don’t overmix.
6. Spoon into the prepared tin and level the top.
7. Bake for 45 minutes, or until golden and a skewer inserted into the centre comes out clean.
8. Leave to cool in the tin for 10 minutes, then transfer to a wire rack.

Lemon Drizzle Icing:

1. Mix the icing sugar with the lemon zest and juice.
2. Add a little water at a time until you reach a thick but pourable drizzle consistency.
3. Spoon over the cooled loaf, letting it drip naturally down the sides.
4. Finish with fresh lemon slices.
