Laura Petersen, is the extremely talented Head Pastry Chef at the award-winning The Salt Room restaurant in Brighton and soon to open The Coal Shed, One Tower Bridge. At only 24 years old, her experience includes stints at Raymond Blancs Le Manoir aux Quat’Saisons, and more recently at Dan Barber’s Blue Hill at Stone Barns.
Based at The Salt Room, Laura is Brighton’s only Head Pastry Chef and has earned a number of accolades as a result. An inventive take on British seaside classics, incorporating nougat, candy floss, ice cream and donuts, culminates in the ͞Taste of the Pier͟, of which over 10000 have been sold in less than two years.
Laura also achieved 3rd place in 2016 Chocolate Dessert of the Year. 40 staff now work under The Salt Room roof, and as part of the opening team, Laura has carved the way in terms of personnel expansion, whilst acting as executive for The Coal Shed; the restaurants older sibling in Brighton and soon to open at One Tower Bridge, London. She is also independently committed to creating menus and developing new concepts, such as the restaurants seaside inspired Afternoon Tea.
