Flageolet, Rocket and Herb Salad with Pomegranate Dressing

Serves 6-8

Ingredients

500g flageolet beans
3 tablespoons roughly chopped basil
3 tablespoons roughly chopped mint
2 tablespoons roughly c hopped parsley
60g wild rocket

For the dressing:
2 tablespoons pomegranate molasses
4 cloves garlic, crushed
6 tablespoons extra virgin olive oil
salt and pepper

Method

  • To make the dressing whisk the pomegranate molasses with the garlic, salt and pepper, then whisk in the oil.
  • Just before serving toss all the salad ingredients with the dressing. Place on the table straight away while the rocket leaves remain lively and crisp.
