Master butcher Ray Smith is an integral part of Hugh Fearnley-Whittingstall’s River Cottage project and has appeared on many of the Channel 4 River Cottage programmes. Famous for his Christmas ten bird roast, Ray is passionate about good animal husbandry and the highest quality ingredients. Ray is planning to show you how to choose, prepare and appreciate meat and fowl – even how to make fresh tasty sausages where you control the ingredients.
