Cheese Gougere

Ingredients

160 ml cold water
65 gr strong plain flour
55gr unsalted butter
2 med eggs, beaten
Salt
Pepper
Cayenne pepper
½ tsp English mustard powder
25gr black onion seeds – to sprinkle
1dst sp blue cheese
40gr grated cheddar cheese

Method

  • Set oven to 190oC.
  • Heat water, butter salt and a little pepper in pan.
  • Sieve flour and mustard powder together.
  • When butter has melted add flour and stir well cooking till mixture is smooth silky and leaves side of pan.
  • Remove pan from heat beat in the blue cheese and half of the grated cheddar.
  • Beat in the eggs a little at a time till all incorporated.
  • Spoon even dollops of mix on to a non stick baking sheet, well spaced.
  • Dust with a little cayenne.
  • Sprinkle over the remaining cheese and some onion seeds.
  • Bake in oven for about 15 – 20 mins +/- dependant on size. Til puffed golden and crisp on outside.
  • Serve.
