Derbyshire Cheese and Beer Fritters
Ingredients
2 ½ oz butter
2 ¾ oz plain flour
2 eggs, beaten
100g strong local cheese
5 fl. oz local beer
1 tsp Worcestershire sauce
1 tsp quality local mustard
1 pinch pepper
400ml veg oil for frying
Salad dressing
2 tbsps flavoured vinegar (cider, herb)
1 tsp wholegrain mustard
1tsp honey
6 tbsps olive oil
Pinch salt and pepper
½ bunch chopped chives(optional)
1 large spoonful local chutney
Handful mixed salad leaves
Method:
Gently heat the beer and butter together until the butter has melted.
Add the sifted flour over the heat and stir until the mixture leaves the side of the pan.
Remove from the heat, add the cheese, mustard and Worcestershire sauce, stirring thoroughly. Place to one side.
Heat the oil in a deep side pan.
Combine the dressing ingredients, pour over a selection of mixed salad a put onto a plate.
Using a desert spoon, gently place spoonfuls of the mixture into the hot oil and crisp fry.
Remove and dry on kitchen paper.
Place on the mixed salad leaves and finish with a spoonful of chutney.
